Sporty, did he do this as a pup?  Did the teeth clap as he wizzed past your head?  You know morning greetings etc?  Or did you see this behavior only when woking with the helper?

My female Holly when working obedience for a toy will chatter her teeth as the drive builds, One must learn to cap drive appropriately to use it to there benefit. If she doesn,t feel she is getting the reward quick enough she will bite a hand or stomach or arm thats why I am now working her and not my lovely wife.

In protection she never chatters her teeth she is very serious about the grip and fights for the sleeve.

Loki used to do it to show his displeasure, he would yawn then snap his teeth shut rather loudly and then give you his patented "you feel me yet" look.  Isis will show her teeth when she is bored (my avatar) then click her teeth shut and stare at you (must have learned it from Loki) and when she is in high drive, she will chatter her teeth like one of those old wind-up toys.  Ronin will snap his teeth when he is all intense and not allowed to bark (I have a signal for "no bark" since he gets excited and will bark like a mad dog).  Looks like barking but all you here is repetitive teeth snapping.

Sporty,
Not every dog displays the same behaviors.

Yeah I know that. My point was why do some do it and others dont? It is not a measure of drive is all I was trying to say.

I didn't have him as a pup and he mainly does it now in detection work. Doesn't do it in protection.

SSG,
Is your detection training based on a toy / towel as a reward?  Wouldn't that be part of his drive?  What drive is your dog working in?  Not sure how you work him in protection but it may be more defensive?

My male Axel is a very high ball drive male, but he never chattered his teeth just a intense stare.
Each dog is different in how there drives manifest. It,s up to the handler on how it is shaped and used to accomplish there training.

 Jim:
I,m hoping with this breeding some of that drive from both will manifest in the puppies.

Bob,
Good luck with your pups.  I'm sure they will each have enough drive for several dogs.

Good Evening to all ; I have a 6 month old female gsd that snaps her teeth all the time , especially doing bite work. She does it at other dogs thru the fence. Any ideas ?

Is she chasing the other dogs through the fence?  Like back and forth tag?  It would support the high prey drive theory? (yes all questions not answers)
