Hello 
I will explain my experience and preference
I have owned both show and work lines

The working lines dogs have an intensity that is completely different.  They have snappier more casual, purposeful movements.  They like biting - not to be confused with aggression at all.  They just find biting on objects satisfying and fun.
They are fast and smart and cheeky.  show dogs can be wonderful family animals.  Working dogs can make you dizzy with their energy and desire to "do" something - ANYTHING - they need to work.

They are very, very  different but that is only relevant according to what you are looking for.  It could be a mistake to buy a working dog when you only want a house dog that looks like he might not be worth crossing.  It would probably be a disappointment to try to trial with a show dog - certainly at high level.  And it would be impossible to get results in beauty shows with a working dog..

 I too have working dogs and a show dog. Indeed the show dog is much calmer and very "family" orientated. She would probably do OK in sports, but she doesn't have what it takes for real protection (property / family protection).

Going back to working dogs, I have both a dog that has loads of drive and fits your description of a working dog; but then, I have another working dog who is very calm when inside, you would almost think there's something wrong with her; she loves to be pet, loves body contact. But then, when outside, something clicks in her mind and she becomes very protective and looks as if she's on a hunt. 
The more drivey working dog (as far as beauty) was rated V by a German judge. I am not bothered at all with high ratings in beauty, I just want the dog to be in the breed standards. My priority is that my dog proves to be indeed a working dog first and foremost.
